Recipe: Mixed Berry Muffins

These mixed berry muffins are the most delicious way to pack in your protein for breakfast, snack-time, or after your workout! These muffins are bursting with fruit flavor. Get the recipe here:

Ingredients:

  • 1 Cup Unsweetened Almond Milk
  • 1 Large Egg White
  • 1 1/2 Cups Oat Flour
  • 1/4 Cup Coconut Sugar
  • 2 tsp. Baking Powder
  • 1/2 tsp. Baking Soda
  • 1 tsp. Cinnamon
  • 1/3 cup Plain Greek Yogurt (or non-dairy equivalent)
  • 1 tsp. Vanilla Extract
  • 1 scoop Mixed Berry Plant-Based Protein
  • 1 cup Fresh Blueberries

Instructions:

  1. Preheat Oven to 375Β°F.
  2. Combine all ingredients in a mixing bowl, folding in fresh blueberries last.
  3. Spray cups or muffin tin with coconut oil or cupcake tins and fill each cup 3/4th full with batter.
  4. Bake for 20 Minutes
  5. Let Muffins cool for 5 minutes and Enjoy!
