Recipe: No-Bake Gingerbread Protein Bites

It's finally the holiday season! Because we are so excited, we decided to twist our favorite snack, the protein bites, with this new Gingerbread flavor! This protein-packed snack brings all the flavor of your favorite holiday gingerbread cookies – without the excessive sugar. They’re easy to throw together and make for a quick and convenient snack after a workout or when you need a pop of energy throughout the day! The only tool you need is a food processor and your hands! Here’s the recipe:

INGREDIENTS:

  • 1 Scoop Plant-Based Protein
  • 1/3 Cup Coconut Flower
  • 2 Tbsp oat milk
  • 1/2 Tsp Cinnamon
  • 1/8 Tsp Ground Cloves
  • 1/4 Tsp Ground Ginger
  • 1/4 Tsp Ground Nutmeg
  • 1 Tbsp Pure Maple Syrup (Substitute - Honey)
  • 1/2 Cup Almond Butter

INSTRUCTIONS:

  1. Combine all ingredients in Food Processor
    Bring all of the ingredients – except for your honey or maple syrup – together and combine using a food processor. Once blended, add the honey or maple syrup and continue to blend in your food processor for 15-30 seconds.
  2. Form Protein Bites
    Ball the batter together into small balls about 1/4 of an inch across. Place them on parchment paper and sprinkle additional coconut flour on top before placing them in the refrigerator for 2-4 hours.
  3. Serve and Enjoy!
Once the bites have cooled in the fridge for a few hours, they’re ready to be eaten. Serve with a glass of plant-based milk and enjoy!
